Our most involved beer, Tokyo* is an Imperial Stout brewed with copious amounts of specialty malts, jasmine and cranberries, dry-hopped with a bucket-load of our favourite hops and then carefully aged on toasted French oak chips. If in doubt, just split the malt bill in two and do a double mash. Mash and collect, clean out and mash and collect again. Don’t even bother sparging – you don’t want any more water in there. Keep the fermentation a little warmer than usual 21 - 23°C, and don’t panic if it takes a month to ferment...
